Welcome again to the home of Easy Healthy Recipes on Budget, Today i will guide you how to make “Vegan Mexican Street Corn Ribs”. I made this Delicious recipe a few days ago, and I absolutely loved it and enjoyed it with my family. It came out very tasty and flavorful.
Don’t worry it’s easy! This delicious healthy recipe is easy to make and i walks you through the steps and all the ingredients on how to make it!

INGREDIENTS:

3 ears of corn
1/2 cup vegan mayo
1 tbl chopped cilantro
1 garlic clove minced
1 1/2 tsp chili lime seasoning (I used Tajin)
4 oz crumbled vegan feta
1 lime
This fun snack is a great way to eat corn, so messy & so delicious!

DIRECTIONS

Using a sharp knife, cut both ends off of corn, creating a flat base. Then use hands to break corn in half.
Next, stand corn up on its base, to split in half through its length. Then cut each piece in half once again through its length, by laying corn on its flat side on a cutting board. Giving 24 corn ribs. Drizzle with neutral oil & salt
Preheat airfryer to 375 F, & air-fry 15-20 min, shaking pan every 5 min or so, till corn turns golden and slightly charred. The cob will start to bend, resembling a rib.
Meanwhile, combine the remaining ingredients (except feta) in a small mixing bowl. Season to taste.
Take ribs out of airfryer, slather with seasoned mayo, feta, & a squirt of lime. Enjoy!!
