This “Spicy Potatoes with Sticky Rice” is a showstopper centerpiece whatever the occasion. Richly flavored, it satisfies vegans and non-vegans alike! Made with simple ingredients, this vegetarian Plant Based recipe is easy to make.
If you’re like me and always feel short on time and don’t want to babysit something for hours, this is a great easy vegan recipe for you:

INGREDIENTS:

  • Potatoes: 3- 4 potatoes peeled and cubed
  • Shallots: 3 finely chopped
  • Garlic: 2 cloves minced
  • Ginger: 1 cm minced
  • Cherry tomatoes: 10
  • Tomato paste: 1 T
  • Green chilli: 2 minced

Whole spices:

  • Cumin seeds: 1 t
  • Mustard seeds: 1 t

Powdered spices:

  • Turmeric: 1 t
  • Coriander powder: 1/2 T
  • Cumin powder: 1 t
  • Fennel powder: 1 t
  • Amchur (dried mango) powder: 1 t
  • Oil : 3 T
  • Water: 2 T
  • Salt: 1 t

DIRECTIONS:

Soak prepared potatoes in cold water for 20 minutes, drain and pat dry

Heat oil in a pan and add whole spices, ginger, garlic and chilli. Fry for a few minutes and add onions and salt

Fry till onions are translucent, then add tomato paste, cherry tomatoes and powdered spices.

Cook frequently frying for 7-8 minutes. If the mixture begins to stick to the pan deglaze with a few T of water.

Mix in potatoes and cook with a lid on till potatoes are soft

Enjoy with hot sticky rice
