Welcome again to the home of Easy Healthy Recipes on Budget, Today i will guide you how to make “Matzo Ball Soup”. I made this Delicious recipe a few days ago, and I absolutely loved it and enjoyed it with my family. It came out very tasty and flavorful.
Don’t worry it’s easy! This delicious healthy recipe is easy to make and i walks you through the steps and all the ingredients on how to make it!

INGREDIENTS:

1 1/4 cup matzo meal
salt/ pepper to taste
2 vegan eggs ( look at brand serving size)
1 cup veggie/or vegan ch’kn broth
1/4 cup neutral oil (I used canola)
2 tbl fresh herbs of choice (I used parsley) Makes approx 9-12 matzo balls

DIRECTIONS:

💚In a large mixing bowl combine matzo meal, salt/pepper (I used 3/4 tsp salt, 1/2 tsp pepper)
💚In a blender, combine vegan eggs & broth on high till blended.Then slowly add oil on high for 1 min till blended
💚Add blended mixture to matzo meal, & combine with a spatula. Add fresh herbs. It should be the consistency of wet sand. If too dry add more broth a little at a time
💚Cover & place dough in the fridge to firm up for at least 4 hrs or up to overnight (recommended)
💚To form matzo balls, scoop out dough roughly 2 rounded tbl. Use a light touch, to form balls. Too much pressure will make them less fluffy. Makes approx 9-12
💚 In a large Dutch oven or stockpot, fill water 2-3 in high so it will cover the matzo balls when added. Salt water heavily & bring to a boil, then set to low heat so it’s just below a simmer, no bubbles or they will break!!
💚Carefully place matzo balls in hot salted water. Cover & cook for 40-50 min, do not open lid during this time
💚Serve matzo balls in your favorite broth! I served mine in a homemade veggie broth with fresh parsley, dill, & carrots.
