Hi all and welcome back to feelitshareit (Home of Plant Based recipes)! I Made “Herby Lentil Veggie Sheet Pan with Spicy Tahini Sauce” today so I thought I’d share with all my savoury lovers! I actually made a few varieties but will share this one for now and the others sometime next week. Hope you have all been well!

INGREDIENTS:

  • 1 1/2 cups cooked brown lentils (or canned make sure to rinse drain and pat dry with a clean towel)
  • 1 cup broccoli florets
  • 1 red bell pepper, cut into strips
  • 1/4 small onion, cut into strips
  • 3-4 garlic cloves, sliced
  • 1 tsp cumin
  • 1/2 tsp fennel seeds
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • Salt and pepper
  • 2 tsp olive oil or more based on preference

Sauce

  • 2 tbsp tahini
  • Juice of half a lemon
  • 2 tsp hot sauce
  • 1/2 tsp garlic powder
  • Pinch of turmeric
  • 1 tsp maple syrup
  • 3-4 tbsp water (adjust based on your preference)

DIRECTIONS:

For sheet pan:

Set oven to 400F. On a 1-2 lined sheet pans add lentils, broccoli, onion and bell peppers. Sprinkle over top your garlic slices, seasonings and then drizzle with a little olive oil and toss with your hands to coat. You can mix everything together if you aren’t worried about presentation. Make sure to spread out evenly on your sheet pan and then place in the oven to bake for 15 minutes.

For sauce:

Stir sauce ingredients together and top bowl as desired.

Assemble:

Portion your veggies, lentils in a bowl and then feel free to use some rice or your preferred starch on the side. Then top with sauce.
