This “Healthier Peanut Butter Cups (Low carb, vegan, gf)” makes eating food plant-based fun, healthy, and most importantly: delicious!
- 1/4 cup coconut oil (melted and cooled to room temp)
- 1/4 cup cacao powder
- 1 1/2 tablespoons maple syrup
- Pinch salt
- 1/3 cup peanut butter or almond butter
- 1 teaspoon maple syrup
- 1 teaspoon coconut flour
First start off by mixing together coconut oil, cacao, maple syrup, and salt (it should be liquid but thick enough to coat sides of liners). Add 1 heaping teaspoon of the chocolate mixture to the bottom of 9 mini-liners. Use a spoon to spread the chocolate up the sides of each liner.
Once the cups are filled, let solidify in the fridge or on counter while you make the peanut butter filling.
Make your peanut butter filling by combining peanut butter or almond butter, maple syrup, and coconut flour in a small bowl. Scoop heaping teaspoons of the mixture into each hardened chocolate filled liner.
If hardened or too thick, melt remaining chocolate in the microwave for a few seconds. Spoon 1 teaspoon of the remaining chocolate on top of the peanut butter, spreading it to cover all of the peanut butter filling. Freeze 5-10 minutes until solid. Store in fridge or freezer until ready to eat.
