Welcome again to the home of Easy Healthy Recipes on Budget, Today i will guide you how to make “curried tomato soup with gnocchi”. I made this Delicious recipe a few days ago, and I absolutely loved it and enjoyed it with my family. It came out very tasty and flavorful.
Don’t worry it’s easy! This delicious healthy recipe is easy to make and i walks you through the steps and all the ingredients on how to make it!

INGREDIENTS:

-1 large onion, diced
-3 cloves garlic, minced
-1 tbsp fresh ginger, minced
-2-3 tsp curry powder, to taste
-1/2 tsp dried basil
-1/2 tsp dried oregano
-1/4-1/2 tsp red chili flakes, to taste
-1 14-oz can tomatoes, crushed or pureed (400g)
-1 14-oz can full-fat coconut milk (400g)
-1 14-oz can chickpeas, drained (250g after draining)
-to serve: 16 oz uncooked gnocchi (450g) — boiled according to package

DIRECTIONS:

In a large pot, heat some oil and saute the onion, garlic, and ginger for 5 minutes. Stir in the curry powder, basil, and oregano. Once fragrant, add the tomatoes, chickpeas, and coconut milk. Cover the pot and simmer for 15 minutes, or until the soup has thickened; stir occasionally to prevent sticking. Season with salt and pepper to taste and stir in the cooked gnocchi. If desired, add in some greens and cook until wilted. Serve warm!
